Local N ews Joe’s Italian Restaurant will open in August

Joe’s Italian Restaurant plans to open at 3330 Main by late August, according to its owner, who also owns the Joe’s restaurant in Independence.

Joe’s Italian Restaurant owner Gino Abazaj said some remodeling and updating will be needed at the former Shredders Smokehouse, which is owned by Tony and Connie Adams. Shredders closed on June 20 after having operated there for about 23 years.

Abazaj said new ovens and other equipment will be added to the kitchen in early August. The dining room doesn’t need any major overhaul.

The menu will be similar to the menu in Independence and will feature Italian food, including steaks, seafood, pizza, pasta dishes.

“It’s going great,” he said of the Independence restaurant, which opened in the old Booth Hotel late last year.

Eventually, he wants to serve wine and beer with the meals in Parsons.

Operating hours will be 11 a.m. to 9 p.m. on Sundays through Thursdays and 11 a.m. to 10 p.m. on Fridays and Saturdays, he said.

Abazaj said he’s already hired some workers for the Parsons restaurant, which will have a staff of 12 to 15 people.

Abazaj has been in the restaurant business for some time, having operated the businesses in Oklahoma and Texas.

He landed in Kansas after failing to find good Italian food when traveling to and from his restaurants.
